Green Smoothie Breakfast Bowl

This week saw me catch a small head cold. The doctor says it’s an upper respiratory infection but I already feel much better. I also went for a Covid-19 test, and praise God, I don’t have the virus.

When I feel under the weather I tend to eat as much fruit and vegetables as I can, because I strongly believe that my body heals faster when I eat more plants. But I didn’t anticipate losing my appetite.

On Wednesday I stared at my breakfast until after 11am, so yesterday I decided to make an exciting protein bowl that tasted just as amazing as it looks. I also made a bowl of oats with peanut butter and dates for added energy. This combination kept me energized and full for hours.

Did you know: Spinach is regarded a superfood and is packed with fiber and vitamin C. It has immune-boosting properties and is high in vitamins and minerals, including folate, iron, magnesium and calcium.

Ingredients

2 cups chopped spinach

1/2 avocado (fat)

1 tsp chia seeds

1/2 cup yogurt (protein)

3 prunes (gut healthy ingredient)

1 tbsp maple syrup

Method

  1. Blitz everything in a blender and enjoy immediately with a sprinkling of chia seeds.
