Tuna Salad

I have been working a lot and when I work a lot I tend to eat cold food. A month or so ago, I made a wonderful tuna salad.

It’s crunchy, filling, cold, and delicious on Provita or crackerbread.

I’ve heard so many rumours about tuna and how much I can and cannot eat. But in a nutshell, it is one of the most protein-rich lunch meals around. It’s also the quickest meal you can rustle up when you’re busy - one of the most attractive things about it.

Did you know: Tuna is very high in protein and fatty acids. It is a wonderful inclusion in a fat loss diet.

Ingredients

1 can tuna

2 tbsp mayo

1/2 onion diced

finger length worth of diced cucumber

1/2 Roma tomato, diced

two stems of celery, chopped

1 garlic chopped

2 tbsp chopped coriander

pepper and salt to taste

Method

  1. In a large bowl, mix the tuna with mayo.

  2. Add all the other ingredients and give it a good toss.

  3. Serve cold with bread, crackers, or Provita.
