Healthy Mousse

Dessert is not often associated with vegetables. 

This one however has them hidden in to fool any kid or adult who doesn’t enjoy greens. It’s light, sweet and the colour is alluring. I made this particularly for my mum. She hates anything green and steamed.

Mousse is often made with eggs but this one contains none. I achieved the whipped cream texture by whizzing up all my ingredients in a blender. I imagine you could use a Nutri-Bullet but I haven’t tried. I also added poppy seeds to this dessert. Not just as a decoration but because it aids digestion. There are many other benefits of poppy seeds but I am always looking out for my gut and trying new ways to keep it functioning as healthy as it can be.  

Did you know: Avocado is a fat but it’s one of the healthiest fats around. It is particularly healthy for the heart. It also improves digestion, reduces depression and can lower the risk of cancer.

Ingredients

2 avocado’s

1/4 cup xylitol

1 tbsp maple syrup (optional)

1 cup steamed baby marrow

1 cup baby spinach, fresh from the fridge

1/2 cup milk

1/2 cup yoghurt

Method

  1. Blitz everything in a blender for 2 minutes until fluffy and creamy.

  2. Serve with poppy seeds for an extra crunch.
