Cauliflower Mash

Mash goes with virtually everything on the menu - fish, steak, chicken, and vegetables.

But real potatoes are heavy and full of starchy goodness - not really a good idea if you’re looking to lose a few kgs. In 2018 I learned how to make cauliflower rice but soon became bored with it. Cauliflower isn’t a lot of people’s favourite vegetable, but it is low in calories.

The sour cream addition in this recipe is a 20g fat portion. That’s 900 + calories and four portions of fat if you eat all of it. But be aware that there are still very few carbs in this dish. It's ideal at supper time if you’re calorie restricting.

Ingredients for 4 meals

2 cauliflower heads/ 2 bags of cauliflower

100ml sour cream (I get mine from Woolies)

salt and black pepper to taste

4 cloves of garlic, diced

spring onion for garnish

Method

  1. Steam cauliflower until tender in the microwave.

  2. In a blender, add cauliflower, salt and pepper, sour cream and diced garlic.

  3. Give it a whizz until it’s absolutely smooth.

  4. Garnish with spring onion.
